smashed brussels sprouts | GIRLS WHO EAT

This is an easy and simple recipe that takes brussels sprouts to a new level. It makes brussels sprouts crispy on the outside and soft on the inside. All you need for this recipe is some cooking oil and simple pantry spices for a light seasoning. To make this recipe, you will need to steam your brussels first so they are soft enough to smash and thenthrow into the air fryer to crisp. Top yours with regular or vegan parm for an added layer of delicious.

For this recipe, you will need:

  • Pot + Steamer Basket
  • Air Fryer
  • Brussels Sprouts – these are best eaten in-season for maximum flavor
  • Olive Oil: I like to use EVOO (extra virgin) because it’s not processed or refined
  • Paprika
  • Garlic Powder
  • Salt
  • Cashews: these do not need to be soaked for the vegan parm recipe
  • Nutritional Yeast: this is a great vegan replacement for cheese and is packed with B vitamins!
  • Garlic Powder

Tips:

  • Cooking time for air fryers may vary based on the size and type so you may need to adjust timing
  • Use the bottom of a cup to smash the brussels sprouts after you steam them
  • You can also drizzle any dressing or sauces, like chipotle mayo on top for even more flavor

How to Store:

  • These taste best eaten the same day because they are crispy, but you can store them in an airtight sealed container in the refrigerator for up to 3 days!

Cooking & Baking Supplies

  • Food Processor
  • Air Fryer

Ingredients

  • 1 lb brussels sprouts
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • salt to taste

Vegan Parmesan Cheese

  • 3/4 cup cashews
  • 2 tbsp nutritional yeast
  • 1/4 tsp garlic powder
  • 1/2 tsp salt

Instructions

  • Rinse and dry your brussels sprouts and then remove any outer brown leaves.
  • Steam brussels by placing them in a pot with about 1-2 inches of water at the bottom and a steamer basket. Cover the pot, let the water come to a boil and steam brussels for 5-10 minutes (until they are soft and cooked through).
  • Place brussels on parchment paper on a flat surface, ideally a counter. Using the base of a cup, press down to “smash” them.
  • You can either drizzle olive oil and spices over the brussels sprouts on the baking tray or move the brussels sprouts to a mixing bowl and mix everything together well.
  • Preheat the air fryer for 4 minutes at 380 degrees. Add brussels sprouts to the air fryer and cook at 380 degrees for 5 minutes, then flip them over and air fry for an additional 3 minutes. Add extra time if needed for extra crispiness.
  • While brussels sprouts cool, add your vegan parm ingredients into a food processor or high speed blender and blend until fine.
  • Top your crispy brussels sprouts with the vegan parm (as much as you want) and ENJOY!
