This easy to make vegetarian egg breakfast recipe is ready in less than 30 minutes and only requires two ingredients and pantry spices. You can use any color of bell peppers depending on if you want your dish sweeter (red and orange peppers are sweeter). You can serve with a side of fresh fruit or smashed potatoes for a heartier breakfast.

For this recipe, you will need:

  • Peppers: you can use any color bell pepper 
  • Eggs: I like to use pasture raised eggs because they pack in the most amount of nutrients 
  • Black Pepper
  • Salt
  • Fresh Herbs: these are optional, but a great topping to add on for added flavor and health benefits

Tips: 

  • The number of pepper slices you need is how many eggs you will need
  • You can top each pepper + egg with any seasoning of your choice, like Italian seasoning or even a blend you love
  • Fresh herbs also make a great topping like chives, dill or parsley

How to Store:

  • Store in an airtight container for up to 3 days

  • Parchment Paper

Ingredients  

  • 2 bell peppers, sliced 1 inch thick
  • 1 egg per slice
  • sprinkle of black pepper
  • sprinkle of salt
  • fresh herbs (chopped dill, parsley, or cilantro)

Instructions 

  • Preheat the oven to 375 degrees and line a baking tray with parchment paper.
  • Cut bell peppers into 1 inch thick rings.
  • Place peppers on a baking tray and crack an egg into each pepper.
  • Top egg with a sprinkle of salt and pepper and cook for 17-19 minutes until egg is cooked through.
  • Top with fresh herbs, any sauces, or additional seasonings and ENJOY!
