Healthy snacks are an essential part of the day especially ones that are nourishing and filling. This date bar recipe is made with only 6 ingredients including nuts, seeds, and lots of dates. They are naturally sweetened and packed with protein, vitamins and nutrients, and have a great crunchy texture. They require some prep, but you can make enough to last you all week long.

For this recipe, you will need:

  • Baking Tray
  • Parchment Paper
  • Food Processor
  • 8×8 Baking Pan
  • Pecans: chopped pecans are best
  • Flax Seeds: use whole seeds, not ground
  • Hemp Seeds
  • Chia Seeds: white or black chia seeds work
  • Coconut: use unsweetened
  • Dates: if they have a pit, make sure you remove them before you begin

Tips:

  • Roast your pecans to add to the flavor of the bars
  • Soak your dates in hot water to allow them to soften
  • Chocolate drizzle on top is optional, and  try to use dairy free and refined sugar free chocolate

How to Store:

  • Once cooled, cut the mixture into bars, then store in a sealed airtight container in the refrigerator for up to 2 week!

Ingredients  

  • 1 cup pecans, chopped
  • 1/4 cup flax seeds
  • 1/4 cup hemp seeds
  • 1/4 cup chia seeds
  • 1/4 cup unsweetened coconut
  • 2 cups dates (approx 18)
  • 1/4 cup dairy free chocolate chips, melted (chocolate drizzle is optional)

Instructions 

  • Preheat the oven to 350 degrees and line a baking tray with parchment paper.
  • Place pecans on the baking tray and roast them for 15 minutes.
  • In a bowl, add dates. Boil water and pour over dates until they are fully covered. Let the dates sit for 10 minutes so they can soften. Then remove the dates from the water and remove any pits.
  • Put softened dates and roasted pecans in a food processor and blend until it becomes a date paste. Then place the mixture into a bowl.
  • Mix together flax seeds, hemp seeds, chia seeds and coconut together in a separate bowl. Then add this blend into the date mixture and mix well together.
  • Line a 8x8 pan with parchment paper. Press the date mixture into the pan and spread it out evenly using a spatula or wooden spoon. Bake at 350 degrees for 12 minutes.
  • When cooled, cut the date mixture into squares.
  • Place your chocolate chips in the microwave for 30 seconds to 1 minute (stir after 30 seconds) until melted. Drizzle chocolate over the date bars and let it harden at room temperature. Store bars in a sealed container in the refrigerator for up to 1 week. ENJOY!
