Preheat the oven to 350 degrees and line a baking pan with parchment paper.
In a medium mixing bowl, mix together wet ingredients (eggs, milk, maple syrup, butter) until smooth.
Add in the dry ingredients to the mixing bowl (almond flour, coconut flour, cinnamon, baking powder, coconut sugar) and mix until smooth.
Stir in the chopped apples and coconut flakes.
Pour mixture into the baking pan and top with thin slices of apple, a sprinkle of coconut, and a sprinkle of coconut sugar (you can also top with nuts like pecans or walnuts).
Cook for 30 minutes and then remove from the oven, sprinkle a little more coconut sugar on top and cover pan with tin foil and cook for another 5 minutes.
Remove the pan from the oven and let cool, then ENJOY!
