Apple Maple Cinnamon Coconut Cake

Ingredients  

  • 2 eggs
  • 1/4 cup dairy free milk
  • 2 tbsp maple syrup
  • 2 tbsp dairy free butter, melted
  • 2 cups almond flour
  • 3 tbsp coconut flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 cup coconut sugar
  • 3/4 cup chopped apples
  • 1/4 cup coconut flakes
  • apple slivers, walnuts, coconut, coconut sugar to top (optional)

Instructions 

  • Preheat the oven to 350 degrees and line a baking pan with parchment paper.
  • In a medium mixing bowl, mix together wet ingredients (eggs, milk, maple syrup, butter) until smooth.
  • Add in the dry ingredients to the mixing bowl (almond flour, coconut flour, cinnamon, baking powder, coconut sugar) and mix until smooth.
  • Stir in the chopped apples and coconut flakes.
  • Pour mixture into the baking pan and top with thin slices of apple, a sprinkle of coconut, and a sprinkle of coconut sugar (you can also top with nuts like pecans or walnuts).
  • Cook for 30 minutes and then remove from the oven, sprinkle a little more coconut sugar on top and cover pan with tin foil and cook for another 5 minutes.
  • Remove the pan from the oven and let cool, then ENJOY!
