Soak dates in warm water for 10 minutes.
While the dates soak, preheat the air fryer to 370 for 4 minutes.
Chop apples into small diced pieces (about ¼ inch to ½ inch big). Add apples to a mixing bowl and coat with ½ tsp cinnamon.
Place tin foil down on the base of the air fryer (leaving some holes exposed) and add apples. Cook for 10 minutes at 370 degrees, shaking halfway.
Add nuts to the food processor and blend until they become small pieces.
Add coconut and dates to the food processor and blend for about 15 seconds, then add in water, vanilla extract, ½ tbsp of cinnamon, salt, and ¾ of the cooked apples and blend until a dough forms.
Line a 8x8 pan with parchment paper and add date dough, spreading it evenly with a spatula (the layer should be about 1 inch thick and might not take up the whole pan).
Place bars into the freezer for 5-10 minutes.
Clean out the food processor and make the glaze by adding all ingredients into the food processor and blending until an icing forms.
Remove the bars from the freezer and spread the glaze over the bars, then sprinkle the remaining ¼ cup of apples on top.
Place the bars back in the freezer for 20-30 minutes and then cut these into squares or bars! Store the bars in the refrigerator and ENJOY!
