In a medium mixing bowl, whisk together all the pancake ingredients, except for coconut oil. Make sure the bananas are mashed well.
In a large pan over low/medium heat, add oil so it fully covers the bottom of the pan (approximately 1-2 tbsp) and let it get hot before you add in the pancake mix. Once hot, add in about ΒΌ batter per pancake. 3-4 pancakes should fit at a time and cook for about 3 minutes on each side
Put on your favorite toppings such as maple syrup, granola, yogurt, or berries + ENJOY!
