Black Garlic Green Beans with Pomegranate Seeds

Ingredients  

Green Beans

  • 1 lb green beans 
  • 2 onions, sliced 
  • 2 tbsp ghee
  • 1/4 cup pomegranate seeds

Dressing

  • 3 tbsp apple cider vinegar
  • 2 tsp dijon mustard
  • 1/2 tsp pomegranate molasses
  • 6 tbsp olive oil

Instructions 

  • In a large pan, add sliced onions and ghee and saute over low heat for 25 minutes or until they turn golden brown. Be sure to stir every couple of minutes.
  • In a pot, steam green beans over medium heat for 10 minutes until they are soft.
  • While the vegetables cook, mix together all dressing ingredients in a small bowl and set aside.
  • When onions and green beans are finished cooking, add the vegetables to a large bowl, pour in the dressing and mix everything together well. Then top with pomegranate seeds and ENJOY!
