Crunchy Nut + Seed Chocolate Bark

Ingredients  

  • 1 cup dairy free chocolate chips, melted
  • 1/2 tsp coconut oil, melted
  • 1/4 cup goji berries
  • 2 tbsp buckwheat cereal
  • 2-3 tbsp sliced almonds
  • 1-2 tbsp peanut butter

Instructions 

  • In a medium bowl, melt chocolate with coconut oil in the microwave at 30 second intervals, mixing in between.
  • Line a 8x8 pan with parchment paper and pour melted chocolate over it, using a spatula to make sure it is evenly distributed across the pan. Should be about ⅛ inch to ¼ inch thick.
  • Add berries, nuts, and seeds on top of the bark, evenly distributing it across the chocolate.
  • Drizzle peanut butter over the chocolate, use a fork to help move it around.
  • Place the pan in the freezer for 15-20 minutes to allow bark to harden. Remove from the freezer and ENJOY!
