1large head of broccoli, cut into florets (approximately 4 cups)
1/4cupsliced almonds
1tbspolive oil
sprinkle of salt
Dressing
1garlic clove, minced
1tbspolive oil
1tbsplemon juice
salt and pepper to taste
Instructions
Cut your broccoli into florets.
Preheat the oven to 375 degrees and line a baking dish with parchment paper (make sure it will be large enough for the broccoli and almonds that will be added later in step 4.
Add broccoli florets to the tray making sure to not overlap them. Brush with olive oil and sprinkle with salt. Cook on top rack for 20 minutes, then remove from the oven and flip broccoli over. Make space for almonds and add them to the baking tray. Cook for 4 minutes, shake almonds, then cook for another 4 minutes or until golden brown.
Remove the tray from the oven and let cool.
While broccoli cooks, prepare the lemon dressing by mixing all of the ingredients together in a bowl or jar.
