Soak the cashews in boiling hot water for 10 minutes.
Add all of the ingredients minus the herbs (parsley and dill) into a high speed blender and blend until smooth.
Add another 1 tbsp of water if it’s too thick and add in herbs, blend until smooth.
If the dressing is too thick, keep adding 1 tbsp of water until it's the consistency you want it to be. Keep it thicker for a dip and thinner for a dressing.
Place dressing in a sealed jar and store in the refrigerator and ENJOY!
