Ingredients

  • 1 cup cashews (soaked in hot water for 10 minutes)
  • 1/2 cup + 2 tbsp water
  • 1 tsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • sprinkle black pepper
  • 1 tsp dried parsley or 1 tbsp fresh parsley
  • 1 tbsp fresh dill

Instructions

  • Soak the cashews in boiling hot water for 10 minutes.
  • Add all of the ingredients minus the herbs (parsley and dill) into a high speed blender and blend until smooth.
  • Add another 1 tbsp of water if it’s too thick and add in herbs, blend until smooth.
  • If the dressing is too thick, keep adding 1 tbsp of water until it's the consistency you want it to be. Keep it thicker for a dip and thinner for a dressing.
  • Place dressing in a sealed jar and store in the refrigerator and ENJOY!
