Dice your onions, cut your tomatoes, slice your olives and chop your dill.
Add olive oil to a medium pan over medium heat and add onions to the pan. Cook for 5-6 minutes until browned.
Add in cherry tomatoes and saute for 2-3 minutes, then add in olives, oregano, and spinach. Cook for 1-2 minutes until spinach starts to wilt, then add in lemon juice, capers, and dill and saute for 2-3 minutes. Top with fresh cracked pepper!
Preheat the air fryer to 390 degrees for 4 minutes. Rinse salmon and pat dry. Coat with olive oil and sprinkle salt, paprika, and oregano and air fry salmon at 390 degrees for 7-8 minutes.
Add spinach mix to a plate and top with salmon and ENJOY!
