Ingredients  

  • 2 eggs
  • 1 cup pumpkin puree
  • 1/3 cup dairy free milk
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups oat flour
  • 2 tsp baking powder
  • 1/4 tsp teaspoon salt
  • 1 1/2 tsp pumpkin spice
  • 2 tbsp coconut oil, melted, to cook

Instructions 

  • In a large mixing bowl, whisk eggs and then add in all wet ingredients (pumpkin puree, nut milk, maple syrup, vanilla extract)
  • Add dry ingredients into a bowl (oat flour, baking powder, salt, pumpkin spice) and mix well until smooth.
  • Heat a large pan over medium heat on the stove and add coconut oil (approximately two tablespoons) so that the base of the pan is covered with oil.
  • Add about ¼ cup of pancake batter to the pan for each pancake (you should be able to cook 3 pancakes at a time) and cook on each side for 3-4 minutes until golden brown. Continue until batter is done.
  • Enjoy pancakes with maple syrup, nut butter, seeds, granola, or berries!
