In a large mixing bowl, whisk eggs and then add in all wet ingredients (pumpkin puree, nut milk, maple syrup, vanilla extract)
Add dry ingredients into a bowl (oat flour, baking powder, salt, pumpkin spice) and mix well until smooth.
Heat a large pan over medium heat on the stove and add coconut oil (approximately two tablespoons) so that the base of the pan is covered with oil.
Add about ¼ cup of pancake batter to the pan for each pancake (you should be able to cook 3 pancakes at a time) and cook on each side for 3-4 minutes until golden brown. Continue until batter is done.
Enjoy pancakes with maple syrup, nut butter, seeds, granola, or berries!
