Heat the olive oil in the skillet on high heat and once hot, add in the mushrooms, onions, and garlic. Stir with a spatula and cook for about 5 minutes or until vegetables are soft.
Rinse cod with cold water and pat dry.
Once the vegetables are soft, add in the cod, tomatoes, and a sprinkle of salt and pepper and cook for a few minutes (about 4-5).
Add in ghee, capers, broth, lemon, thyme, oregano and cover pan and cook for 5-7 minutes over medium heat until cod is cooked to your liking.
Remove from heat and enjoy over potatoes, rice, cauliflower rice, or roasted veggies and ENJOY!
