Chocolate Dipped Coconut Stuffed Dates

These chocolate dipped stuffed dates will change your life. They are a healthier dessert option that will satisfy your sweet tooth and sugar cravings.  Dates are packed with all kinds of minerals and vitamins and are rich in fiber and antioxidants. This date recipe is easy to make and is ready in less than 5 minutes and is gluten free, dairy free, and vegan.  The combination of chocolate, dates, coconut, and salt hits the spot when you need a dessert that is both healthy and delicious.

For this recipe, you will need:

  • Dates: use pitted dates if you can, but otherwise just remove the pits before you start preparing these
  • Coconut: choose shredded unsweetened coconut that does not have extra unnecessary sugar added
  • Chocolate: my go to brand for this is Hu Chocolates Gems because they are dark chocolate and refined sugar free, but any type of chocolate works
  • Almonds or Chocolate Chunks: I topped these with chunks of Honey Mama’s limited edition Cherry & Hazelnut Bar but you can use any chocolate bar or almonds
  • Flaky Sea Salt: this type of sea salt brings out the flavor of these and is the perfect final topping

How to Store:

  • Store these in an airtight container in the refrigerator for up to 4 days (they will likely not last this long!)

Ingredients  

  • 8 dates
  • 1/2 cup unsweetened coconut
  • 1/2 cup dairy free chocolate, melted
  • 1/2 chocolate bar
  • flaky sea salt

Instructions 

  • Place dates on a tray or plate lined with parchment paper.
  • Cut dates open in half lengthwise, making sure not to cut all the way through. Remove the pits.
  • Stuff the dates with coconut until they are full.
  • Microwave the chocolate until it is fully melted in increments of 30 seconds, mixing each time before you microwave again.
  • Coat the base of the dates in the melted chocolate by dunking each one by hand into the chocolate and then placing them back on the parchment paper.
  • Cut the chocolate bar into small ½ inch pieces and place a piece in the middle of the date on top of the coconut.
  • Drizzle any remaining melted chocolate over the dates, sprinkle sea salt over the top, and then place them in the refrigerator for 15-20 minutes to harden. ENJOY!
