Place dates on a tray or plate lined with parchment paper.
Cut dates open in half lengthwise, making sure not to cut all the way through. Remove the pits.
Stuff the dates with coconut until they are full.
Microwave the chocolate until it is fully melted in increments of 30 seconds, mixing each time before you microwave again.
Coat the base of the dates in the melted chocolate by dunking each one by hand into the chocolate and then placing them back on the parchment paper.
Cut the chocolate bar into small ½ inch pieces and place a piece in the middle of the date on top of the coconut.
Drizzle any remaining melted chocolate over the dates, sprinkle sea salt over the top, and then place them in the refrigerator for 15-20 minutes to harden. ENJOY!
