Black Bean Patties with Mango Salsa

These black bean patties are a great protein packed recipe for lunch or dinner that use pantry staple spices.  Enjoy them plain, dressed with your favorite sauce, or serve them topped with eggs and salsa for a great brunch option! They are versatile and easy to make and are ready in less than 30 minutes. For a hearty meal, these are a great gluten free, dairy free and vegan option. 

What you will need for this recipe:

  • Food Processor or High Speed Blender
  • Medium Pan
  • Mixing Bowl
  • Black Beans
  • Olive Oil: I like to use extra virgin because it is not refined or processed
  • Yellow Onion: this is a sweeter variety and tastes great when browned and caramelized
  • Paprika
  • Garlic Powder
  • Salt
  • Garbanzo Bean Flour: I used this as a binder. You can use a thicker flour like oat flour as another option.  

Tips:

  • Saute your onions until they brown to increase the caramelized flavor in the patties
  • For a variety, add in any spice blends you like (Blackened, Cajun, or Italian seasoning for example), just keep the total measurements the same as the paprika +  garlic powder combined
  • Enjoy the patties with a fried egg on top or with homemade chipotle aioli (mix mayo with some sriracha) 

How to Store:

  • Once the patties cool, place in a sealed airtight container in the refrigerator for up to 3 days!

Ingredients  

Black Bean Burgers

  • 1 tbsp olive oil
  • 1 small yellow onion, diced (about ¾ cups)
  • 1 large garlic clove, minced
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • sprinkle of salt
  • 1 15oz can black beans
  • 1/4 cup garbanzo bean flour
  • 5 fried eggs to top (optional)

Mango Salsa

  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup mango, diced
  • 1/4 cup red onion, chopped
  • 1 tbsp parsley, chopped for garnish
  • 1/2 lime, juiced
  • salt to taste

Instructions 

  • Mince your garlic, dice your onion, and drain and rinse your black beans.
  • In a medium pan over medium heat, add olive oil and onions and saute until the onions start to brown (about 5 minutes). Add in the garlic and saute for another 1-2 minutes. Remove from heat and let cool.
  • In a high speed blender or food processor, add in beans, garlic, onions, and all spices (paprika, garlic powder, and salt). Pulse until the beans are small chunks but stop before the mixture is completely smooth.
  • Move the bean mixture to a mixing bowl and mix in the garbanzo bean flour.
  • Reheat your pan over medium heat, scoop out ¼ cup of the mixture to make each patty and add them to the pan. Flatten the patties using a spatula so they are about 1-2 inches thick and cook on both sides for about 3 minutes, or until they brown. Continue until all are cooked!
  • Once patties are finished cooking, make your mango salsa by placing all ingredients in a mixing bowl.
  • Add the salsa on top of each patty and add a fried egg (optional) on top. ENJOY!
