guacamole | GIRLS WHO EAT

Guacamole is always a staple in my household because you can always find at least two ripe avocados in our refrigerator. I love avocados because they’re a healthy fat that aids in gut health and digestion! Guacamole is also so easy to make and the fun part is you can top it with anything you want, from seeds to fruit to herbs and spices. It also requires no equipment other than a bowl, so it is a great beginner dish!

When I make guacamole I definitely have fun with the toppings. Fruit is one of my favorite ones – I have done mango, pomegranate seeds, and even grapes before! It’s always so delicious and the perfect dinner appetizer or side dish! Also, it takes 5 minutes to whip together and you can enjoy it with crackers, cut veggies, plain or simply in a taco shell.

This recipe is a simple guacamole, but you can easily change up the spices and add in a kick like cayenne or cumin! I enjoyed ours with my favorite Spirulina Lime cactus chips from Nemi Holisticks (use code GIRLSWHOEAT for 15% any online orders)!
