Peel the corn and remove the husks and any strings.
Cut both ends off the corn (about 2 inches) using a sharp knife. Stand the corn upwards and cut away from your body, cut the corn down the center core lengthwise into two halves. Then cut each half of the corn in half so you have 4 quarters. Cut the quarters down the middle to make your ribs (be VERY careful and watch your hands). Cutting it this way makes it easier to cut the corn into ribs.
Place corn ribs in a medium mixing bowl and add olive oil and blackened seasoning. Mix everything together well.
Preheat your air fryer for 3 minutes at 400 degrees.
Add corn to air fryer (don’t layer any on top of each other) and cook for 10-12 minutes.
While corn cooks, make your chipotle dressing by mixing all ingredients in a small bowl.
Remove corn from the air fryer. You might have to do a couple of rounds of cooking your corn depending on how large your air fryer is.
Add sauce over the cooked ribs + sprinkle fresh cilantro on top + ENJOY!
