Preheat the oven to 350 degrees and line a cupcake muffin pan with muffin cups.
In a large mixing bowl, mix together wet ingredients (eggs, vanilla extract, coconut oil, maple syrup, milk), then add in the dry ingredients (cocoa powder, almond flour, baking powder, salt). Mix together well.
Add in chopped Undercover Quinoa and mix in well.
Pour cupcake mixture into cupcake liners, filling them up ¾ the way full.
Bake cupcakes for 22 minutes.
While cupcakes bake, mix together icing ingredients in a medium mixing bowl.
Remove cupcakes from the oven and let cool for 5-10 minutes, then top with icing and ENJOY!
