Chocolate muffins are a staple dessert and what if I told you they could have some hidden fiber in them from quinoa – well it’s true. These are not just your typical chocolate muffins.  They are stuffed with crispy quinoa that adds in extra crunch and nutrients. This recipe is chocolatey and not overly sweet with a dairy free and refined sugar free icing without any powdered sugar!

These cupcakes require limited prep and are ready in 35 minutes. First, blend together the wet ingredients, then add in the dry ingredients. Mix these together well and add the mixture evenly to the cupcake muffin pan. While the cupcakes cook, mix together your icing.

Ingredients  

Cupcakes

  • 3 eggs
  • 1 tsp vanilla extract
  • 1/3 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1/4 cup dairy free milk
  • 3/4 cup cocoa powder
  • 1 cup almond flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup chopped Undercover Quinoa (optional)

Icing

  • 1/2 cup dairy free butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 tbsp cocoa powder
  • 2 tbsp coconut flour

Instructions 

  • Preheat the oven to 350 degrees and line a cupcake muffin pan with muffin cups.
  • In a large mixing bowl, mix together wet ingredients (eggs, vanilla extract, coconut oil, maple syrup, milk), then add in the dry ingredients (cocoa powder, almond flour, baking powder, salt). Mix together well.
  • Add in chopped Undercover Quinoa and mix in well.
  • Pour cupcake mixture into cupcake liners, filling them up ¾ the way full.
  • Bake cupcakes for 22 minutes.
  • While cupcakes bake, mix together icing ingredients in a medium mixing bowl.
  • Remove cupcakes from the oven and let cool for 5-10 minutes, then top with icing and ENJOY!
