Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In a medium mixing bowl, mix together the almond butter, coconut sugar, egg and vanilla extract until smooth. Add in the baking soda and cinnamon and mix.
Fold in chocolate chips.
Using a spoon or cookie scoop, place even size balls (about 2-3 tbsp) onto the baking sheet until all of the dough is made into cookie balls.
Using a spoon or hand, push the balls down to make even height cookies (about 1 inch).
Cook for 9-10 minutes. Remove from the oven, let cool, and top with salt, then ENJOY!
