Cinnamon Chocolate Almond Butter Cookies

These cookies are life changing and the secret ingredient is Revival Food Co. Cinnamon + Chai Spices nut butter. While this isn’t required to make this recipe, it’s HIGHLY recommended! These cookies take 20 minutes to make and are gluten free, dairy free, and refined sugar free. They also require no flour so once cooked they are crisp on the outside and gooey and soft on the inside.

There is no prep to make these cookies. You will want to mix wet ingredients in a mixing bowl then add in the dry ingredients and scoop into even balls, bake them, and done! For this recipe, I used Revival Food Co. (use code GIRLSWHOEAT for 10% off), which is a craft nut butter brand that makes stone ground almond butters with no sugar and no fillers. This company’s butters have such unique flavors and the texture is a bit crunchy (but still smooth) since there are little pieces of the nuts in the butter.

This recipe can easily be made with any nut or seed butter from any brand and is sure to be a crowd favorite!

  • Parchment Paper

Ingredients  

  • 1 cup almond butter
  • 1/2 cup coconut sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 cup chocolate chips
  • sprinkle of salt on top

Instructions 

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • In a medium mixing bowl, mix together the almond butter, coconut sugar, egg and vanilla extract until smooth. Add in the baking soda and cinnamon and mix.
  • Fold in chocolate chips.
  • Using a spoon or cookie scoop, place even size balls (about 2-3 tbsp) onto the baking sheet until all of the dough is made into cookie balls.
  • Using a spoon or hand, push the balls down to make even height cookies (about 1 inch).
  • Cook for 9-10 minutes. Remove from the oven, let cool, and top with salt, then ENJOY!
