In a medium mixing bowl, mix all of the ingredients (except coconut oil) together until blended.
Using a fork, place the bread slices into mixture coating both sides well for about 15 seconds per side.
Heat a medium sized pan over medium heat and add coconut oil so the entire base of the pan is covered.
Once oil is hot, add your bread to the pan and cook for a few minutes on both sides until slices are golden brown. You can always lower heat if they start to brown too quickly. I will just take longer for each side to cook.
Remove the toast from the pan and add your favorite toppings, some maple syrup, and ENJOY!
