Coffee Sourdough French Toast | GIRLS WHO EAT

Who else grew up eating French Toast as their go to breakfast on the weekends? For me, it was pretty frequent so I decided to take my childhood favorite and adult it a bit by adding some coffee and sourdough bread instead. I love this recipe because it takes less than 5 minutes to prep and no more than 10 minutes to cook meaning that in 15 minutes you have yourself a delicious breakfast. It’s also fun to switch things up on the weekend and make this!

For this recipe, you will make your mixture in a medium mixing bowl, coat both sides of your bread, and then add it to an already hot pan on the stove! You will want to flip your French Toast once the side starts to brown so a couple of minutes on each side. What’s fun about this dish is you can add all your favorite toppings such as almond butter, and maple syrup!

You can easily make this with any kind of bread, but challah would taste great. This recipe is enough to coat at least 6 half pieces so you can store the rest of your cooked french toast in your refrigerator in an airtight container if you want to eat leftovers the next day!

Substitution Ideas:

  • Coffee: you can omit this entirely or use decaf
  • Gluten free bread: any bread works, challah or sourdough are great options

Cooking & Baking Supplies

  • Lodge Cast Iron Skillet

Ingredients  

  • 2 eggs
  • 1/3 cup dairy free milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tbsp ground coffee
  • 2 pieces gluten free bread
  • coconut oil, melted

Instructions 

  • In a medium mixing bowl, mix all of the ingredients (except coconut oil) together until blended.
  • Using a fork, place the bread slices into mixture coating both sides well for about 15 seconds per side.
  • Heat a medium sized pan over medium heat and add coconut oil so the entire base of the pan is covered.
  • Once oil is hot, add your bread to the pan and cook for a few minutes on both sides until slices are golden brown. You can always lower heat if they start to brown too quickly. I will just take longer for each side to cook.
  • Remove the toast from the pan and add your favorite toppings, some maple syrup, and ENJOY!
