Colorful Kale, Carrot, and Cabbage Coleslaw

Ingredients  

  • 1 cup kale, chopped and packed
  • 2 carrots, grated
  • 2 cups red cabbage, sliced
  • 1/4 cup mayo
  • 2 tbsp apple cider vinegar
  • 1/2 tbsp honey
  • 1/2 tbsp dijon mustard
  • 2 tbsp olive oil
  • salt to taste

Instructions 

  • Chop your kale, slice your cabbage, grate your carrots and place it all in a medium bowl.
  • In a small bowl, add the mayo, apple cider vinegar, honey, dijon mustard, olive oil, and a sprinkle of salt and mix together well to make the dressing.
  • Add the dressing on top of the vegetables coating them well. If you are not tight on time, letting the slaw sit for an hour will enhance flavor.
  • Enjoy as the base of tacos or with your favorite protein!
