Chop your kale, slice your cabbage, grate your carrots and place it all in a medium bowl.
In a small bowl, add the mayo, apple cider vinegar, honey, dijon mustard, olive oil, and a sprinkle of salt and mix together well to make the dressing.
Add the dressing on top of the vegetables coating them well. If you are not tight on time, letting the slaw sit for an hour will enhance flavor.
