Who else is always looking for ways to use up cabbage in their fridge? Well, I got you covered with this super easy coleslaw recipe that is packed with colorful vegetables and a simple mayo dijon dressing. You can eat this slaw plain, add it to tacos, or top it with your favorite protein. It can be prepped in advance and enjoyed for a couple of days and no baking is required.

For this recipe, you will need:

  • Kale: any kale will taste good in this recipe, but I used green curly kale!
  • Carrots
  • Cabbage: I used red cabbage, but green cabbage works just as well
  • Mayo: I used an avocado oil based mayo, but you can use any kind you have in your pantry
  • Apple Cider Vinegar: this gives the slaw some acidity and tartness that balances out the honey and dijon mustard
  • Honey
  • Dijon Mustard
  • Olive Oil: I like to use EVOO (extra virgin) since it’s not processed or refined
  • Salt

Tips:

  • Prep your vegetables in advance so you can easily make this for a side dish or add-on to dinner
  • You can add black pepper for a little kick
  • Make this during meal prep and store to to eat throughout the week with different types of meals such as tacos, grain bowls or with a protein
  • Letting the slaw sit in the dressing for an hour will enhance the flavor

How to Store:

  • Store in a sealed airtight container in the refrigerator for up to 3 days!

Colorful Kale, Carrot, and Cabbage Coleslaw

Ingredients  

  • 1 cup kale, chopped and packed
  • 2 carrots, grated
  • 2 cups red cabbage, sliced
  • 1/4 cup mayo
  • 2 tbsp apple cider vinegar
  • 1/2 tbsp honey
  • 1/2 tbsp dijon mustard
  • 2 tbsp olive oil
  • salt to taste

Instructions 

  • Chop your kale, slice your cabbage, grate your carrots and place it all in a medium bowl.
  • In a small bowl, add the mayo, apple cider vinegar, honey, dijon mustard, olive oil, and a sprinkle of salt and mix together well to make the dressing.
  • Add the dressing on top of the vegetables coating them well. If you are not tight on time, letting the slaw sit for an hour will enhance flavor.
  • Enjoy as the base of tacos or with your favorite protein!
