Dairy Free Sweet Noodle Kugel

Ingredients  

Kugel

  • 1 12oz bag of egg noodles
  • 5 eggs
  • 2 tsp cinnamon
  • 1/4 cup maple syrup
  • 2 cups applesauce
  • 3 tbsp flax meal
  • sprinkle of salt
  • 1/2 cup raisins
  • coconut oil (to coat pan)

Homemade Applesauce

  • 6 apples
  • 3 cinnamon sticks
  • 1 1/4 cups water

Instructions 

  • To make your own applesauce: Peel apples and cut them into quarters. Remove the cores and cut up apples into cubes. Put cubes, cinnamon sticks and water into a covered pot. Bring to a boil and then cook on low boil for about 30 minutes. Once apples soften, use a potato masher or fork to smash the apples. Remove the cinnamon sticks and let cool.
  • Preheat oven to 350 degrees and coat a 9x13 pan with oil (I used coconut oil)
  • Boil 6 cups of water and add pasta to boiling water. Set a timer and cook for 5 minutes, then drain and rinse with cold water to stop pasta from cooking.
  • While pasta is in the pot cooking, add eggs, cinnamon, maple syrup, applesauce, flax meal, salt, and raisins to a large bowl and mix together well.
  • Add cooked noodles to the mixing bowl and coat noodles well with the applesauce mixture.
  • Add the noodle mixture to the baking pan and spread it out evenly using a spatula.
  • Add a generous amount of extra cinnamon on top.
  • Place the baking pan in the oven and cook for 30 minutes. Then increase oven heat to 375 degrees and cook for another 20 minutes. Remove from the oven + ENJOY!
