To make your own applesauce: Peel apples and cut them into quarters. Remove the cores and cut up apples into cubes. Put cubes, cinnamon sticks and water into a covered pot. Bring to a boil and then cook on low boil for about 30 minutes. Once apples soften, use a potato masher or fork to smash the apples. Remove the cinnamon sticks and let cool.
Preheat oven to 350 degrees and coat a 9x13 pan with oil (I used coconut oil)
Boil 6 cups of water and add pasta to boiling water. Set a timer and cook for 5 minutes, then drain and rinse with cold water to stop pasta from cooking.
While pasta is in the pot cooking, add eggs, cinnamon, maple syrup, applesauce, flax meal, salt, and raisins to a large bowl and mix together well.
Add cooked noodles to the mixing bowl and coat noodles well with the applesauce mixture.
Add the noodle mixture to the baking pan and spread it out evenly using a spatula.
Add a generous amount of extra cinnamon on top.
Place the baking pan in the oven and cook for 30 minutes. Then increase oven heat to 375 degrees and cook for another 20 minutes. Remove from the oven + ENJOY!
