It’s officially Hannukah and while some people’s favorite part of the holiday might be the presents (I mean 8 nights of gifts isn’t a bad deal), mine is definitely the food. Sweet kugel has always been a staple of any Jewish holiday and for good reason – it’s the best comfort food. It’s delicious and egg noodle-y with tons of cinnamon and lightly sweetened with maple syrup. This version is dairy free and fluffy from the eggs and homemade applesauce.
So what is kugel? Kugel is a noodle casserole that can be either savory or sweet. It is a typical Ashkenazi Jewish dish that is usually made with fruits, raisins, and egg noodles.
This recipe looks way more difficult than it actually is. All you have to do is make the noodles and while the noodles are boiling, you mix together the egg mixture with cinnamon, applesauce, maple syrup, flax meal, salt, and raisins. Then add the cooked noodles to the mixture, coat it well, add the mixture to a 9×13 baking pan and cook it all in the oven until the top is browned and crispy.
I had a lot of leftover apples, so I decided to make my own homemade applesauce but you can use any unsweetened applesauce in a jar one from your local grocery store (just remember to read the label and make sure the ingredients are only apples without added sugar). I used Honeycrisp apples which are naturally very sweet and just added in cinnamon. This variety of apples is widely available in most grocery stores, but you can buy any apples made for baking.  Â

Dairy Free Sweet Noodle Kugel

Ingredients
Kugel
- 1 12oz bag of egg noodles
- 5 eggs
- 2 tsp cinnamon
- 1/4 cup maple syrup
- 2 cups applesauce
- 3 tbsp flax meal
- sprinkle of salt
- 1/2 cup raisins
- coconut oil (to coat pan)
Homemade Applesauce
- 6 apples
- 3 cinnamon sticks
- 1 1/4 cups water
Instructions
- To make your own applesauce: Peel apples and cut them into quarters. Remove the cores and cut up apples into cubes. Put cubes, cinnamon sticks and water into a covered pot. Bring to a boil and then cook on low boil for about 30 minutes. Once apples soften, use a potato masher or fork to smash the apples. Remove the cinnamon sticks and let cool.
- Preheat oven to 350 degrees and coat a 9x13 pan with oil (I used coconut oil)
- Boil 6 cups of water and add pasta to boiling water. Set a timer and cook for 5 minutes, then drain and rinse with cold water to stop pasta from cooking.
- While pasta is in the pot cooking, add eggs, cinnamon, maple syrup, applesauce, flax meal, salt, and raisins to a large bowl and mix together well.
- Add cooked noodles to the mixing bowl and coat noodles well with the applesauce mixture.
- Add the noodle mixture to the baking pan and spread it out evenly using a spatula.
- Add a generous amount of extra cinnamon on top.
- Place the baking pan in the oven and cook for 30 minutes. Then increase oven heat to 375 degrees and cook for another 20 minutes. Remove from the oven + ENJOY!
