long wood skewers

zucchini, cut into 1 inch rings or halves
1
box mushrooms
1/2
large onion, cut into 1-2 inch thick pieces
1
bell pepper, cut into 1-2 inch thick pieces
Marinade
1/4
cup
olive oil
2
tbsp
parsley
1
tbsp
cilantro
1
tbsp
dill
2
garlic, minced
1
tbsp
lemon juice
1/8
tsp
salt
sprinkle of pepper
Instructions
Cut up all of your vegetables and get them all ready to be skewered.
Add vegetables in whatever order you would like to the skewers (either alternating different vegetables or doing a skewer per vegetable).
Add skewers to a large enough pan.
In a small mixing bowl, mix together oil, parsley, cilantro, dill, garlic, lemon juice, salt, and pepper.
Add mixture over the vegetable and let marinate for at least 30 minutes or up to 1 hour.
Heat up the grill and add your skewers. Cook on each side for a few minutes until vegetables are fully cooked through.
Remove from the grill and ENJOY!
