Grilling is a great way to make a quick and easy meal with little cleanup! These skewers are simple and easy and make use of seasonal vegetables, but you can use any of your favorite vegetables. I like to marinate them in a fresh herb mixture, because it adds so much taste and is great for your health. These kabobs are great as a side dish for any meal and are ready in 30 minutes or  less. They are a staple grill recipe of mine every summer and you can serve as a side dish, served over quinoa or brown rice, or on a salad.

For this recipe, you will need:

Skewers

Zucchini: you can find these at your local farmer’s market in season, especially in the fall and at most grocery stores

Mushrooms: I use small baby bella mushrooms but any will do

Onion

Bell Pepper

Olive Oil: I like to use EVOO (extra virgin) because it’s not refined or processed

Parsley: it’s best to use fresh parsley because this adds so much flavor to the dish

Cilantro: if you’re not a cilantro fan, this can be omitted

Dill: one of my favorite herbs that adds so much taste

Garlic: this has so many healthy benefits including being great for your immune system

Lemon Juice: this adds zest and tanginess to the dish and a refreshing taste and gives you a boost of Vitamin C

Salt: I go light on the salt so you can add more to taste

Pepper

Tips:

  • Soak wood skewers in water for about 5-10 minutes before using or use metal skewers that can be reused
  • For skewering, cut the zucchinis in circles, keep the mushrooms whole (cut off some of the stem), cut off the ends of the onions and then cut in quarters, and cut peppers in half, seed and then cut into quarters
  • You can also add in cherry or grape tomatoes
  • Serve over quinoa, brown rice, or salad to make these a main meal
  • Use any vegetables you love to roast or saute

How to Store:

  • Store leftovers in the refrigerator for up to 2 days in a sealed airtight container!

Ingredients  

  • 3-4 long wood skewers
  • 1 zucchini, cut into 1 inch rings or halves
  • 1 box mushrooms
  • 1/2 large onion, cut into 1-2 inch thick pieces
  • 1 bell pepper, cut into 1-2 inch thick pieces

Marinade

  • 1/4 cup olive oil
  • 2 tbsp parsley
  • 1 tbsp cilantro
  • 1 tbsp dill
  • 2 garlic, minced
  • 1 tbsp lemon juice
  • 1/8 tsp salt
  • sprinkle of pepper

Instructions 

  • Cut up all of your vegetables and get them all ready to be skewered.
  • Add vegetables in whatever order you would like to the skewers (either alternating different vegetables or doing a skewer per vegetable).
  • Add skewers to a large enough pan.
  • In a small mixing bowl, mix together oil, parsley, cilantro, dill, garlic, lemon juice, salt, and pepper.
  • Add mixture over the vegetable and let marinate for at least 30 minutes or up to 1 hour.
  • Heat up the grill and add your skewers. Cook on each side for a few minutes until vegetables are fully cooked through.
  • Remove from the grill and ENJOY!
