Ingredients  

  • 1 cup dates
  • 1 cup shredded unsweetened coconut, toasted
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 tsp coconut oil (optional)

Instructions 

  • Soak dates in warm water for 10-15 minutes.
  • While dates soak, heat up a medium non-stick pan over medium heat and toast the coconut, stirring frequently until it browns.
  • In a high speed blender or food processor, blend together dates, vanilla, and salt
  • Add in toasted coconut and blend again until it's a dough texture.
  • Line a baking tray with parchment paper or a plate and scoop out 1 ½ tablespoon balls of the date mixture and roll into balls and place on a tray or plate. Continue until all of the mix is done!
  • Use your hand to flatten balls into 1 inch thick circle cookies. I used a metal straw to poke the hole in the middle but you can use anything in your kitchen like the top of a handle from a mixing spoon.
  • Place the cookies in the freezer for 15 minutes. Remove the cookies from the freezer and heat up chocolate with coconut oil in a shallow bowl starting with 30 seconds and adding an additional 30 seconds if needed.
  • Dip the cookie bases into the chocolate mixture and then drizzle chocolate over the top of the cookies. Place the cookies back in the freezer for 10-15 minutes to allow them to harden and set.
  • Remove from the freezer and ENJOY!
