Soak dates in warm water for 10-15 minutes.
While dates soak, heat up a medium non-stick pan over medium heat and toast the coconut, stirring frequently until it browns.
In a high speed blender or food processor, blend together dates, vanilla, and salt
Add in toasted coconut and blend again until it's a dough texture.
Line a baking tray with parchment paper or a plate and scoop out 1 ½ tablespoon balls of the date mixture and roll into balls and place on a tray or plate. Continue until all of the mix is done!
Use your hand to flatten balls into 1 inch thick circle cookies. I used a metal straw to poke the hole in the middle but you can use anything in your kitchen like the top of a handle from a mixing spoon.
Place the cookies in the freezer for 15 minutes. Remove the cookies from the freezer and heat up chocolate with coconut oil in a shallow bowl starting with 30 seconds and adding an additional 30 seconds if needed.
Dip the cookie bases into the chocolate mixture and then drizzle chocolate over the top of the cookies. Place the cookies back in the freezer for 10-15 minutes to allow them to harden and set.
Remove from the freezer and ENJOY!
