I always used to look forward to Girl Scout cookie season so I could stock up on boxes of samoas. These are by far my favorite Girl Scout cookie so I knew I had to make a healthier version. This 6 ingredient samoas tastes just as good as the ones I used to eat all the time growing up. But they are so MUCH healthier and nutrient dense and the best news is that they are no bake and take less than an hour to make!
What are Samoas?
They are traditional Girl Scout cookies with caramel, coconut, and a chocolate drizzle! They have a hole in the center and are crisp, gooey, and delicious!
To make this recipe, you will need:
- Food Processor
- Medium Baking Pan
- Baking Tray or Plate with Parchment Paper
- Dates: this is what gives these cookies texture and a caramel like flavor
- Shredded Coconut: Toasted coconut gives these cookies a rich flavor that brings this cookie to life
- Vanilla Extract
- Salt
- Chocolate Chips: I used Hu Gems, but you can also melt a chocolate bar
- Coconut Oil: this is completely optional, but helps make the chocolate melt better
Tips:
- Toast your coconut on the stove in a pan versus in the oven so that you can keep a close eye on it since it tends to brown and burn quickly
- Soak your dates in warm water prior to starting the recipe so that they soften and are easier to blend
- Whole or pitted dates work, just make sure to remove the pit
How to Store:
- Store in a sealed airtight container in the refrigerator for up to a week

Ingredients
- 1 cup dates
- 1 cup shredded unsweetened coconut, toasted
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup chocolate chips
- 1/2 tsp coconut oil (optional)
Instructions
- Soak dates in warm water for 10-15 minutes.
- While dates soak, heat up a medium non-stick pan over medium heat and toast the coconut, stirring frequently until it browns.
- In a high speed blender or food processor, blend together dates, vanilla, and salt
- Add in toasted coconut and blend again until it's a dough texture.
- Line a baking tray with parchment paper or a plate and scoop out 1 ½ tablespoon balls of the date mixture and roll into balls and place on a tray or plate. Continue until all of the mix is done!
- Use your hand to flatten balls into 1 inch thick circle cookies. I used a metal straw to poke the hole in the middle but you can use anything in your kitchen like the top of a handle from a mixing spoon.
- Place the cookies in the freezer for 15 minutes. Remove the cookies from the freezer and heat up chocolate with coconut oil in a shallow bowl starting with 30 seconds and adding an additional 30 seconds if needed.
- Dip the cookie bases into the chocolate mixture and then drizzle chocolate over the top of the cookies. Place the cookies back in the freezer for 10-15 minutes to allow them to harden and set.
- Remove from the freezer and ENJOY!
