Preheat the oven to 400 degrees and line a baking tray with parchment paper.
Wash and dry your cauliflower well.
Remove the green leaves around the stem and trim the stem if they are really long. Keep the stem (about 3-4 inches) and core intact.
Slice the cauliflower in half right down the middle and then cut 1 ½ - 2 inch thick steak slivers with a sharp knife.
Place the cauliflower steaks on the baking tray.
Mix together the lime juice, paprika, minced garlic, honey, and salt in a small bowl.
Brush the olive oil onto both sides of the cauliflower steaks. Then sprinkle both sides with the lime juice mixture. Place the tray in the oven and cook for 20 minutes. Then flip the steaks and cook for another 10-15 minutes or until browned and cauliflower steaks are soft when poked with a fork.
Remove the cauliflower from the oven and top with the pesto and ENJOY!
