This might be the only way I eat cauliflower from now on! These thick roasted cauliflower steaks make a great vegan dinner and are so delicious with fresh lime juice, paprika, and honey. They are bursts of flavor in your mouth – tangy, sweet, and spicy.
This recipe is made with simple and real ingredients. It is also gluten free, nut free, and dairy free! Cauliflower is a vegetable superfood because it’s high in natural fiber, packed with vitamin C and antioxidants, and nutrient dense.
The challenging part of this recipe is cutting the cauliflower. You will need to:
- Wash and dry your cauliflower well
- To make the steaks, you want to keep the core and stem intact. Carefully remove the green leaves at the bottom around the stem (I use my hands for this, but you can also use a knife). If the stem is really long, cut it so at least 3-4 inches remain.
- Cut through the middle of the cauliflower with a sharp knife and then cut 1 ½ – 2 inch thick slivers. You should be able to get about 3-4 steaks out of a regular sized cauliflower. Some florets may fall off, but just roast these with the steaks
Tips:
- Leave as much core and base so that your cauliflower will stick together as a steak.
- It’s normal for some florets to fall off, but roast these with the steaks!
- Coat your steaks with olive oil and spices directly on the baking tray to save time and make cleaning up easy!
- Use a sharp knife.
- Enjoy these steaks right off the pan or top with a refreshing sauce like my avocado creama!

Ingredients
Cauliflower Steaks
- 1 head of cauliflower
- 2 tbsp olive oil
- 3 tbsp lime juice
- 1 garlic, minced
- 1 tsp paprika
- 1/2 tsp honey
- 1/4 tsp salt
Instructions
- Preheat the oven to 400 degrees and line a baking tray with parchment paper.
- Wash and dry your cauliflower well.
- Remove the green leaves around the stem and trim the stem if they are really long. Keep the stem (about 3-4 inches) and core intact.
- Slice the cauliflower in half right down the middle and then cut 1 ½ - 2 inch thick steak slivers with a sharp knife.
- Place the cauliflower steaks on the baking tray.
- Mix together the lime juice, paprika, minced garlic, honey, and salt in a small bowl.
- Brush the olive oil onto both sides of the cauliflower steaks. Then sprinkle both sides with the lime juice mixture. Place the tray in the oven and cook for 20 minutes. Then flip the steaks and cook for another 10-15 minutes or until browned and cauliflower steaks are soft when poked with a fork.
- Remove the cauliflower from the oven and top with the pesto and ENJOY!
