Soak cashews in boiling hot water for 10-15 minutes to allow them to soften.
Add all of the ingredients to a high speed blender and blend until smooth.
Pour the mixture into a pot and let it cook over low to medium heat, whisking frequently. Once it starts to begin to boil or bubble a little, immediately reduce to low heat.
Continue to whisk frequently and if it starts to thicken quickly , add in additional plant based milk, starting with 1 tbsp at a time until it becomes the consistency you want. Once the mixture is in the pot, this should happen fairly quickly (no more than 5 minutes)
