Make Your Own Condensed Milk

Store bought condensed milk uses a lot of refined sugar and inflammatory oils like caraggeened so thanks to an amazing request from my community, I decided to make a better for your health version, and it’s dairy free! The color on my version is different from traditional condensed milk because of the cashews I used mixed with maple syrup.  Try this 5 ingredient version the next time a recipe calls for condensed milk instead!i

For this recipe, you will need:

  • Cashews: raw and unsalted
  • Non-Dairy Milk: I used organic almond milk that just has almonds and water, but you could use any plant based milk (just check the ingredients!)
  • Maple Syrup: pure maple syrup is what you want to use
  • Vanilla: make sure it’s just pure vanilla extract and not imitation vanilla extract which uses artificial and refined sugars, flavors, and preservatives
  • Salt: I used Redmond Real Salt
  • Whisk
  • High Speed Blender

Tips

  • Make sure to whisky continuously when this is on the stove so it doesn’t burn
  • Once it starts to bubble reduce the heat from medium to low immediately and continue to whisk
  • The consistency that you are looking for is that you want this to be thick enough to stick to the back of a spoon, but still able to be drizzled
  • If the consistency is too thick, add in additional milk to the pot 1 tbsp at a time and mix in until it’s the consistency you want
  • Use to:
    • Drizzled on fruit, desserts like brownies or ice cream
    • In recipes that call for condensed milk (if it needed cold, let it cool first)
    • In beverages to sweeten the

How to Store:

  • Store in an airtight sealed container in the refrigerator for up to one week

Ingredients  

  • 1 cup raw cashews (soaked)
  • 1/2 cup non-dairy milk + 3-4 tbsp when on stove
  • 1/2 cup maple syrup
  • 1/2 tsp teaspoon vanilla extract
  • 1/8 tsp teaspoon salt

Instructions 

  • Soak cashews in boiling hot water for 10-15 minutes to allow them to soften.
  • Add all of the ingredients to a high speed blender and blend until smooth.
  • Pour the mixture into a pot and let it cook over low to medium heat, whisking frequently. Once it starts to begin to boil or bubble a little, immediately reduce to low heat.
  • Continue to whisk frequently and if it starts to thicken quickly , add in additional plant based milk, starting with 1 tbsp at a time until it becomes the consistency you want. Once the mixture is in the pot, this should happen fairly quickly (no more than 5 minutes)
  • Remove from heat, let cool and ENJOY
