grated cucumber, with the liquid squeezed out

dairy free yogurt

fresh mint or dill, chopped (or 1 tbsp of each)

Instructions
Grate cucumber and use a cloth to squeeze out the liquid.
In a medium bowl, add all ingredients together and mix well.
Serve with pita, vegetables, or enjoy over fish!
