Make Your Own Tzatziki

This easy tzatziki recipe is great as a dip and can be served as an appetizer with fresh vegetables, toasted pita, or served as a sauce with fresh fish or roasted vegetables. This recipe is made in less than 30 minutes and is gluten free and dairy free. It’s one of my favorite recipes to make during cucumber season! 

For this recipe, you will need:

Cucumber

Yogurt: I used a dairy free coconut yogurt, but any plain yogurt will work, just check the label for added refined sugar and natural flavors

Olive Oil: I like to use EVOO (extra virgin) because it’s not refined or processed

Mint or Dill: I use fresh herbs for the best flavor

Lemon Juice

Garlic: this has so many healthy benefits including being great for your immune system

Salt

How to Store:

  • Store in the refrigerator in a sealed container for up to 2 week

Ingredients  

  • 1/2 cup grated cucumber, with the liquid squeezed out
  • 1 cup dairy free yogurt
  • 1/2 tbsp olive oil
  • 2 tbsp fresh mint or dill, chopped (or 1 tbsp of each)
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1/4 tsp salt

Instructions 

  • Grate cucumber and use a cloth to squeeze out the liquid.
  • In a medium bowl, add all ingredients together and mix well.
  • Serve with pita, vegetables, or enjoy over fish!
