Mediterranean Inspired Grain Bowl with Falafel

Ingredients  

  • 1/8 cup corn (fresh, frozen, or canned)
  • 1/4 cup roasted turmeric cauliflower
  • 1/4 cup Israeli Salad (tomatoes, onions, cucumbers)
  • 1/8 cup pickled onions
  • 2 tbsp tzatziki
  • 2 tbsp smoked spice sauce
  • 1 cup cooked farro
  • 1 cup arugula
  • 3 falafel

Instructions 

  • Preheat oven to 375 and line a baking tray with parchment paper.
  • Mix cauliflower with some olive oil and any desired spices - I used a turmeric blend and cook for 20-30 minutes (mix around at the 10 minute mark) until lightly golden and soft.
  • Make an Israeli salad with one large tomato, one cucumber, and 1/4 chopped red onion. Sprinkle some salt + lemon juice.
  • Add grains and greens to a large bowl, then top with Israeli salad, corn, pickled onions, sauces, and protein. ENJOY!
