Preheat oven to 375 and line a baking tray with parchment paper.
Mix cauliflower with some olive oil and any desired spices - I used a turmeric blend and cook for 20-30 minutes (mix around at the 10 minute mark) until lightly golden and soft.
Make an Israeli salad with one large tomato, one cucumber, and 1/4 chopped red onion. Sprinkle some salt + lemon juice.
Add grains and greens to a large bowl, then top with Israeli salad, corn, pickled onions, sauces, and protein. ENJOY!
