I love Mediterranean fast casual spots, but being in quarantine has limited our options of where to dine so I decided to make my own Mediterranean inspired bowl and boy did it come out GREAT! There are so many different combinations you can put together to make this bowl. For this one I used delicious falafels from Fabalish (use code GIRLSWHOEAT for 10% off your online order here), as well as their vegan tzatziki and vegan smoked spice sauce. I also added in some corn, turmeric roasted cauliflower, Israeli salad, pickled onions, some greens, and farro as the grain.
I love this bowl because you can really clean out your fridge with vegetables you want to use up and also can prep a lot in advance (pickled onions, cauliflower, and farro). To make this bowl, start with a base like any green or grain of your choice, or a combo of both like I did. Then combine your veggies and your protein (falafel for us) and add in your sauces. You can either place them on the side like I did or mix them together and drizzle your sauce on the top. This entire bowl is completely vegan and sugar free!
With the veggies and protein in this bowl, I was full for a while and got a lot of different nutrients from the different ingredients. I will definitely be making a lot more variations of this bowl because it’s super easy, quick, and takes limited prep time.
Substitution Ideas:
- Falafel: swap out falafel for any protein of your choice – chicken, tofu, beans, etc
- Sauces: use any sauce of your choice, dressings, or coconut aminos
- Grains: you can use quinoa, brown rice, or any grain or greens
The below recipe is an estimate, so feel free to use more or less of any of your favorite ingredients!

Mediterranean Inspired Grain Bowl with Falafel
Ingredients
- 1/8 cup corn (fresh, frozen, or canned)
- 1/4 cup roasted turmeric cauliflower
- 1/4 cup Israeli Salad (tomatoes, onions, cucumbers)
- 1/8 cup pickled onions
- 2 tbsp tzatziki
- 2 tbsp smoked spice sauce
- 1 cup cooked farro
- 1 cup arugula
- 3 falafel
Instructions
- Preheat oven to 375 and line a baking tray with parchment paper.
- Mix cauliflower with some olive oil and any desired spices - I used a turmeric blend and cook for 20-30 minutes (mix around at the 10 minute mark) until lightly golden and soft.
- Make an Israeli salad with one large tomato, one cucumber, and 1/4 chopped red onion. Sprinkle some salt + lemon juice.
- Add grains and greens to a large bowl, then top with Israeli salad, corn, pickled onions, sauces, and protein. ENJOY!
