Preheat the oven to 350 degrees and line a baking tray with parchment paper. Add hazelnuts and roast them for 20 minutes or until golden brown.
Place dates in a bowl with warm water for 10 minutes to let soften.
Remove hazelnuts from the oven and let cool.
In a food processor, blend dates, cacao powder, hemp seeds, salt, water, 1 cup of hazelnuts, and the vanilla extract until a dough forms.
Heat chocolate chips in the microwave starting with 30 seconds and adding an additional 30 seconds if needed.
Chop up 1 cup of hazelnuts into small pieces which is what you will use to roll the dough balls in.
Roll your dough into 1 tbsp balls, add 1 full hazelnut into the middle of the dough ball, coat the ball in chocolate, and roll the ball in chopped hazelnuts to fully cover it.
Place the dough ball on a plate or baking tray with parchment paper and continue until all of the dough is used up.
Place in the refrigerator for 20 minutes to let chocolate set then ENJOY!
