Ferrero Rocher will be my favorite chocolate forever hands down! They are always a treat when you eat them and are something my family knew to get me each and every birthday. I wanted to make a version that tastes just as good, but that was refined sugar free and “healthier” and that’s how these balls of joy came to life!
What are Ferrero Rochers?
They are a chocolate treat with a hazelnut center that is covered in nutella and then a chocolate wafer, more chocolate, and hazelnuts. Sadly, Ferrero Rocher is packed with not so clean ingredients like whey powder, lecithin, and palm oil!
To make this recipe, you will need:
- Food Processor or High Speed Blender
- Baking Tray or Plate
- Dates: this is what gives the balls the sweetness! You can get pitted or whole dates and remove the pit
- Cacao Powder
- Hemp Seeds (optional): these are a complete protein, so I love to add them in and they don’t alter the final flavor at all
- Salt
- Raw Hazelnuts: you will want to roast them, so make sure they are raw and unsalted. Roasted hazelnuts help to intensity flavor so I recommend doing this for this recipe instead of leaving them raw
- Vanilla Extract
- Chocolate Chips (optional): I like to use Hu Gems because they are refined sugar free. Don’t have chocolate chips? Melt a chocolate bar!
Tips:
- Covering your date balls in chocolate is optional and if you don’t have chocolate or don’t want to use it, you can still roll your ball in the chopped hazelnut and it will stick
How to Store:
- Store in a sealed airtight container in the refrigerator for up to two weeks or in the freezer in a sealed airtight container for up to 3 months. If you freeze these, remove them from the freezer and let them sit for 10-15 minutes at room temp before popping them in your mouth!

Ingredients
- 6 dates
- 2 tbsp cacao powder
- 2 tbsp hemp seeds
- 1/8 tsp salt
- 2 tbsp water
- 2 1/2 cups hazelnuts
- 1 tsp vanilla extract
- 1/2 cup dairy free chocolate chips
Instructions
- Preheat the oven to 350 degrees and line a baking tray with parchment paper. Add hazelnuts and roast them for 20 minutes or until golden brown.
- Place dates in a bowl with warm water for 10 minutes to let soften.
- Remove hazelnuts from the oven and let cool.
- In a food processor, blend dates, cacao powder, hemp seeds, salt, water, 1 cup of hazelnuts, and the vanilla extract until a dough forms.
- Heat chocolate chips in the microwave starting with 30 seconds and adding an additional 30 seconds if needed.
- Chop up 1 cup of hazelnuts into small pieces which is what you will use to roll the dough balls in.
- Roll your dough into 1 tbsp balls, add 1 full hazelnut into the middle of the dough ball, coat the ball in chocolate, and roll the ball in chopped hazelnuts to fully cover it.
- Place the dough ball on a plate or baking tray with parchment paper and continue until all of the dough is used up.
- Place in the refrigerator for 20 minutes to let chocolate set then ENJOY!
