In a medium bowl, mix together the peanut butter, maple syrup, and coconut flour until smooth.
On a baking sheet lined with parchment paper, scoop out and roll 1 tbsp balls of dough and then flatten to be 1 inch thick. Place dough in the refrigerator for 15 minutes.
Once dough has hardened a bit, warm coconut oil and chocolate chips in the microwave in a medium bowl (start with 30 seconds, then add another 30 seconds if needed) and coat peanut butter dough entirely. Dip peanut butter cookies into the bowl and use a spoon to coat the chocolate over it entirely.
Place cookies back on parchment paper and place in the refrigerator for 30 more minutes for chocolate to harden then ENJOY!
