One Pan Wild Rice Mushroom Apple Stuffing

Ingredients  

  • 1-2 tbsp ghee
  • 1 cup onions, chopped
  • 2 cups sliced mushrooms, chopped
  • 2 cloves garlic, minced
  • 1 apple, diced
  • 1/4 cup almonds, sliced
  • 1 tsp dried thyme
  • 1 tbsp fresh parsley, chopped
  • 2 cups cooked wild rice

Instructions 

  • In a large pan over medium heat, saute onions with the ghee until browned. Stir frequently. This could take 5-10 minutes.
  • Add mushrooms into the pan and saute until they are soft.
  • Add chopped apples into the pan and saute for 1-2 minutes.
  • Add in minced garlic and spices (thyme, parsley) to the pan.
  • Add in wild rice to the pan and the almonds and mix everything together well. Keep on low heat for 5 minutes.
  • Remove from heat and serve hot. ENJOY!
