One Pan Wild Rice Mushroom Apple Stuffing

Wild Rice Stuffing | GIRLS WHO EAT

I love Thanksgiving and all the food. Honestly, stuffing might be one of my favorite dishes so I decided to make a vegetarian version that is gluten free and this might be one of the best dishes you will have this holiday season. It is ready in less than 30 minutes and is such an easy prep that is also great as a side dish, however you are celebrating this year. 

This stuffing is made in one pan so I used my Our Place The Always Pan because it’s so easy to clean and is non-stick. It’s worth every penny! To make this recipe, you will first saute the onions in ghee until they brown. Then add in the mushrooms, saute until soft, then the apples. Finally, add in the garlic, spices, wild rice, and almonds. You will need to cook the wild rice in advance, but that is easily something you can prep the day before and store in the fridge. The almonds in this dish add a good crunch and the apples add a bit of sweetness!

I love using ghee as a dairy free butter replacement and is just as delicious. It also has great health benefits like having anti-inflammatory properties and being full of omega-3s. It helps give the body energy and also has a high heat point, making it a great cooking oil.

This dish makes enough for 3-4 people and so any leftovers can be stored in the fridge to have over the next few days! Just warm it up in the microwave.

Ingredients  

  • 1-2 tbsp ghee
  • 1 cup onions, chopped
  • 2 cups sliced mushrooms, chopped
  • 2 cloves garlic, minced
  • 1 apple, diced
  • 1/4 cup almonds, sliced
  • 1 tsp dried thyme
  • 1 tbsp fresh parsley, chopped
  • 2 cups cooked wild rice

Instructions 

  • In a large pan over medium heat, saute onions with the ghee until browned. Stir frequently. This could take 5-10 minutes.
  • Add mushrooms into the pan and saute until they are soft.
  • Add chopped apples into the pan and saute for 1-2 minutes.
  • Add in minced garlic and spices (thyme, parsley) to the pan.
  • Add in wild rice to the pan and the almonds and mix everything together well. Keep on low heat for 5 minutes.
  • Remove from heat and serve hot. ENJOY!
