Cooking & Baking Supplies

  • Staub Rectangular Baking Dish
  • Parchment Paper

Ingredients

Salmon Burgers

  • 3 4oz pieces of salmon
  • 1/4 cup almond flour
  • 1 egg
  • 1/2 shallot, chopped
  • 1/2 tbsp lime juice
  • salt and pepper
  • 1-2 tbsp olive oil

Avocado Sauce

  • 2 avocados
  • 1/2 lime, juiced
  • 1 large garlic clove, minced
  • 1/8 cup olive oil
  • 1 tbsp fresh dill
  • 1 tbsp water
  • salt to taste

Instructions

  • Preheat the oven to 375 degrees and line a baking dish with parchment paper.
  • Coat the salmon with a little olive oil, salt, and pepper.
  • Cook the salmon for 15-18 minutes, until fully cooked through. Then remove the salmon from the oven and let cool.
  • While the salmon cools, chop your shallot and place all avocado sauce ingredients (avocado, lime, garlic clove, olive oil, dill, water, salt) into a high speed blender or food processor and blend until smooth.
  • Put sauce in a bowl and place in the refrigerator.
  • Once the salmon is cool, remove the salmon from the skin and place the salmon in a medium mixing bowl. Mash salmon into small pieces using a fork, then add in almond flour, egg, shallot, lime juice) and mix well.
  • Heat up a medium pan or 9’’ skillet over medium heat and add oil (olive or avocado is best) and make sure it covers the entire base of the pan.
  • Form the salmon into balls or patties (approximately 3-4 tbsp), then place them onto the already hot pan. It should fit approximately 3 burgers and you want to cook for 3-5 minutes on each side until they turn a golden brown and look crispy.
  • Repeat until the entire mixture is done, then top your burgers with the avocado crema + ENJOY!
