Ingredients  

  • 2 eggs
  • 1/3 cup tahini
  • 1 tsp vanilla extract
  • 1/8 cup coconut oil, melted
  • 1/8 cup maple syrup
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1 cup + 1 tbsp almond flour
  • 1/2 tsp salt
  • 1/4 cup coconut sugar
  • 1/4 cup chocolate chips

Instructions 

  • Preheat the oven to 325 degrees.
  • In a medium mixing bowl, mix together wet ingredients (eggs, tahini, vanilla, coconut oil, maple syrup) until smooth.
  • Add dry ingredients to the mixing bowl (baking soda, baking powder, almond flour, salt, coconut sugar) and stir well until completely smooth.
  • Fold in chocolate chips with a spatula.
  • Transfer mixture to a 9”cast iron skillet and use a spatula to evenly spread the mixture in the skillet (should be about ¼ to ½ inch high).
  • Add additional chocolate chips to the top of the cookie.
  • Bake for 18-20 minutes until the cookie top is a light golden brown. ENJOY!
