Salted Chocolate Tahini Skillet Cookie (gluten free, refined sugar free, dairy free)

This recipe is great for anyone who craves a mix of sweet and salty. After many attempts to perfect this recipe, I got a winner and I promise it won’t disappoint. Tahini can be an overpowering taste, but the combo of ingredients allows for it to be a subtle flavor instead.

I am a bit obsessed with skillet cookies because I find it fun to eat right out of the pan! The problem is that  skillet cookies always seem to be completely gone a couple hours after making them.

Making this cookie is super simple! Just combine the wet ingredients together first, then add in the dry ingredients and mix until the batter is totally smooth. You’ll fold in chocolate chips with a spatula and then transfer the mixture over to the skillet. Since you use oil in the cookie, there is no need to additionally grease the skillet.

I suggest adding some chocolate to the top of the cookie. For this version, I topped mine with a Honey Mama’s bar and then drizzled some additional chocolate after it was cooked!

Substitution Ideas:

  • Coconut Sugar: you can use maple syrup instead
  • Chocolate Chips: you can leave these out completely

Ingredients  

  • 2 eggs
  • 1/3 cup tahini
  • 1 tsp vanilla extract
  • 1/8 cup coconut oil, melted
  • 1/8 cup maple syrup
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1 cup + 1 tbsp almond flour
  • 1/2 tsp salt
  • 1/4 cup coconut sugar
  • 1/4 cup chocolate chips

Instructions 

  • Preheat the oven to 325 degrees.
  • In a medium mixing bowl, mix together wet ingredients (eggs, tahini, vanilla, coconut oil, maple syrup) until smooth.
  • Add dry ingredients to the mixing bowl (baking soda, baking powder, almond flour, salt, coconut sugar) and stir well until completely smooth.
  • Fold in chocolate chips with a spatula.
  • Transfer mixture to a 9”cast iron skillet and use a spatula to evenly spread the mixture in the skillet (should be about ¼ to ½ inch high).
  • Add additional chocolate chips to the top of the cookie.
  • Bake for 18-20 minutes until the cookie top is a light golden brown. ENJOY!
