S’mores Sweet Potato Brownies

Ingredients  

  • 1 cup sweet potato, mashed
  • 1/2 cup almond butter
  • 1/2 cup maple syrup
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup coconut flour
  • 1/3 cup cocoa powder
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 cup chocolate chips
  • vegan mini marshmallows to sprinkle on top

Instructions 

  • Cook sweet potato: preheat oven to 400 degrees, coat with coconut oil, poke holes in potato, and place on a parchment lined baking tray. Cook for 40 minutes and turn the sweet potato over after 20 minutes. It should feel soft when you poke it with a fork once its fully cooked. Let cool for 10 minutes and reduce oven heat.
  • If you already have a sweet potato or once your potato is cooked: preheat the oven to 350 degrees and line a 9’’ baking tray with parchment paper.
  • Mix together wet ingredients (sweet potato, almond butter, maple syrup, egg, vanilla) and then add in dry ingredients (coconut flour, cocoa powder, salt, baking powder) and mix. We recommend using a hand mixer to make sure the mixture is blended well.
  • Fold in the chocolate chips and use a spatula to add mixture to the baking tray. Make sure to even out the mixture so it is the same thickness across the entire pan.
  • Cook for 30 minutes and then remove from the oven. Top the entire top of the brownies with vegan mini marshmallows and place back in the oven on low broil. Broil for 2 minutes or until golden brown. Make sure to keep an eye on it because it will burn quickly.
  • Remove from the oven, let cool for about 10 minutes and then ENJOY!
