These brownies sneak in some veggies (sweet potato), but you can’t even notice them! They are nice and soft and the perfect texture and oh did I mention they’re gluten free and dairy free. I topped mine with marshmallows to make it taste like a healthier s’mores and I was so happy I did. These are really easy to whip up – taking less than 10 minutes to prep.
To make these, I suggest cooking a sweet potato in advance to save time, but you can also cook it right before you make the brownies. I love having something with chocolate in it on hand to have as a little treat throughout the day or after dinner. I suggest keeping them in the refrigerator for up to three days and microwaving them for 10-15 seconds before you want to eat them to soften them up.
To get the best consistency for the dough, I recommend using a hand held mixer. To make the marshmallows crispy on top, you will want to broil them in your oven, but keep a close eye on them because they can easily burn! These brownies are bound to have you reminiscing about days around the bonfire and honestly is there anything better than chocolate mixed with burnt mallows.
Substitution Ideas:
- Sweet Potatoes: can also do pumpkin or sweet potato puree
- Almond Butter: you can use any nut or seed butter
- Maple Syrup: you can sub in coconut sugar or honey
- Egg: you can make this vegan by using a flax egg (mix 1 tbsp of flax mixed with 2 ½ tbsp water and let it sit in the fridge for 5 minutes or so and stir occasionally)

S’mores Sweet Potato Brownies

Ingredients
- 1 cup sweet potato, mashed
- 1/2 cup almond butter
- 1/2 cup maple syrup
- 1 egg
- 1 tsp vanilla
- 1/2 cup coconut flour
- 1/3 cup cocoa powder
- 1/4 tsp salt
- 1 tsp baking powder
- 1/2 cup chocolate chips
- vegan mini marshmallows to sprinkle on top
Instructions
- Cook sweet potato: preheat oven to 400 degrees, coat with coconut oil, poke holes in potato, and place on a parchment lined baking tray. Cook for 40 minutes and turn the sweet potato over after 20 minutes. It should feel soft when you poke it with a fork once its fully cooked. Let cool for 10 minutes and reduce oven heat.
- If you already have a sweet potato or once your potato is cooked: preheat the oven to 350 degrees and line a 9’’ baking tray with parchment paper.
- Mix together wet ingredients (sweet potato, almond butter, maple syrup, egg, vanilla) and then add in dry ingredients (coconut flour, cocoa powder, salt, baking powder) and mix. We recommend using a hand mixer to make sure the mixture is blended well.
- Fold in the chocolate chips and use a spatula to add mixture to the baking tray. Make sure to even out the mixture so it is the same thickness across the entire pan.
- Cook for 30 minutes and then remove from the oven. Top the entire top of the brownies with vegan mini marshmallows and place back in the oven on low broil. Broil for 2 minutes or until golden brown. Make sure to keep an eye on it because it will burn quickly.
- Remove from the oven, let cool for about 10 minutes and then ENJOY!
